This kitchen is how I would like a custom kitchen to cook in with so many places to store things like big drawers under cabinets, drawers that pull out to store spices and another cabinet that has wire racks installed for storing baking and the cabinetry is beautiful. I would love a kitchen with double ovens like this to bake and cook in and with so much counter space it would be so fun! I hope you will stop by and read my Kitchen Tour to see more Now I am bringing back a recipe I tired many years ago; “Pineapple Oatmeal Bars” and thought you might enjoy, but I dont have a recent picture, so I am sharing from Elsie’s Pineapple Oatmeal Bars Recipe These bars have a buttery, oatmeal and brown sugar crust with the pineapple topping. My recipe is a modified version of the original!
These Pineapple bars are delicious and have just a bit of tartness, sometimes I just want something that is not so sweet. And since the pineapple is so sweet I cut down the white sugar by 1/2 cup. They are still plenty sweet. And Quick Oats work best, Old Fashion oats make it a bit more difficult to press into the pan. They also keep well, unless you have kids around then they disappear quick!
The filling is easy with only three ingredients and I like simple. You can use crushed or pineapple Tidbits just dont pour off the juice. The crust is like making a cookie dough “very easy”! Total time of prep and baking, about 30 min, then time to cool to cut and serve.
Tip for cutting and cleanup: To make it easier to cut bars. Tear a piece of parchment or tinfoil long enough for edges to hang over the end of your pan, when baking and cooling is complete, you can use those edges to remove from pan, lift out and onto counter before cutting to serve.
1 (20 ounce) cans crushed pineapple ( Do not drain) or Tidbits
1 cup sugar (my version -1/2 cup)
3 1/2 tablespoons cornstarch
1 3/4 cups oatmeal
1/4 teaspoon salt
1 cup brown sugar
1 1/2 cups flour
1 teaspoon baking powder
3/4 cup butter or 3/4 cup margarine, softened
For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
Crust: For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.
Filling: Pour filling over oatmeal mixture and spread evenly.
Sprinkle reserved crumbs evenly over filling.
Bake at 350º for 20 minutes. cool and cut into bars.
Other suggestions and additions:
♦ The bars will hold together better when you use regular butter or margarine “but not a spread”
♦ Add chopped macadamia nuts and coconut to the reserved topping
♦ Using Pineapple Tidbits
♦ Try adding white chocolate chips
