I Made The Plunge Into an Instant-Pot-Recipe Linkup

Being that I am now only cooking for 1 most of the time, I decided I needed to make meals that I could freeze for those times when I didn’t want to cook. I have a Crock-Pot but I want the convenience of making meals fast and after searching recipes on Pinterest and reading about using an Insta Pot that helped me make the decision to purchase and I knew if I waited until Nov I would find a good price.

Infuse caffeine into some treats so you can get your fix while enjoying something delicious. These caffeine brownies are so fluffy you won’t want to stop stuffing your face with them.

Ingredients

  • 8 cups black coffee
  • 1 1/2 cups white sugar
  • 1/2 cup butter (melted)
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder (unsweetened)
  • 3/4 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Method

  1. Boil your black coffee until it’s reduced to just 2/3 cup; stir often. This should take about 30 minutes and it’ll be thick and concentrated. Let it cool.
  2. Preheat your oven to 350 degrees and grease your 8×8 baking pan.
  3. Stir together the sugar butter until it’s smooth. Then, beat in the eggs and vanilla extract.
  4. Pour in the coffee concentrate and cocoa powder; stir until there are no more lumps.
  5. In a different bowl, mix together the flour, baking powder, and salt. Stir this dry mix into the wet mix. Mix until smooth.
  6. Take the batter and spread it all around the baking pan. Bake until a toothpick can be inserted and taken out cleanly; this should take about 30 minutes.
  7. Let the brownies cool and then cut it into small bars.

Caramel Macchiato Ice Cream

On a hot summer day, you probably won’t want to sip a hot coffee. So have some ice cream instead to get your coffee fix. For this recipe, you’ll need an ice cream machine.

Ingredients

  • 1 cup milk
  • 1 cup white sugar
  • 1 pinch salt
  • 2 tablespoons instant coffee
  • 2 cups heavy cream
  • 3/4 cup caramel dessert sauce

Method

  1. Mix together the first 4 ingredients until the sugar granules are dissolved.
  2. Add the heavy cream and stir until smooth.
  3. Chill the mixture in the refrigerator for at least 2 hours.
  4. Make “soft serve” ice cream in your machine.
  5. Put half of the ice cream in a tub and pour half of the caramel dessert sauce on top. Repeat this process.
  6. Get a knife and swirl the caramel sauce around the ice cream.
  7. Cover the tub and leave the ice cream in the freezer for at least 2 hours before eating.

This recipe doesn’t take a professional baker to make. In fact, you can bring these truffles to life with your microwave!

Ingredients

For the truffles, you’ll need:

  • 24 ounces semisweet chocolate chips
  • 8 ounces of cream cheese (softened)
  • 3 tablespoons instant coffee
  • 2 teaspoons water

For the coating, you’ll need:

  • 6 ounces semisweet chocolate chips
  • 1 tablespoon shortening

Method

  1. Put some wax paper onto your baking sheet.
  2. Melt the chocolate chips for the truffles in your microwave. Take it out every 30 seconds to stir.
  3. Mix in all the rest of the ingredients for the truffles until it’s blended.
  4. Chill the truffle mix in your refrigerator. This should take around 30 minutes.
  5. Use your hands to roll small 1-inch balls from the truffle mix and place them on the baking sheet.
  6. Chill the truffles for a few hours.
  7. Melt the chocolate chips and shortening for the coating in the same manner for the truffle mix.
  8. Dip each truffle into the melted chocolate mixture and place them back on the baking sheet.
  9. Let the coating set, which should take at least 30 minutes.

Coffee Mug Cake

This is another recipe where you can make in the microwave. The best thing about this one is its serving size is one!

Ingredients

  • 3 tablespoons chocolate chips
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 2 tablespoons water
  • 1/8 teaspoon baking soda
  • 1 egg
  • 1/2 teaspoon instant coffee

Method

  1. Put the chocolate chips and olive oil into a cup. Microwave it for about 30 seconds to melt the chocolate chips.
  2. Stir in the dry ingredients and mix well with a fork.
  3. Add the wet ingredients and mix again with your fork.
  4. Microwave the mixture until it’s cooked through; this should take about 1 1/2 minutes.
  5. Let the mug cake cool off for a few minutes before digging in.

Easy Mocha Trifle

For those of you who are lazy, this recipe will be a cinch to make. We make use of instant pudding mix, package brownie mix, and store-bought toffee bars for this dessert.

Sure, this recipe uses instant coffee. But you can enjoy your shot at home while making these desserts with a quality espresso machine.

Ingredients

  • 1 box brownie mix
  • 1 3/4 cups milk
  • 2 packages instant white chocolate pudding mix
  • 4 teaspoons instant coffee
  • 2 tablespoons hot water
  • 2 cups frozen whipped topping (thawed)
  • 3 bars chocolate-covered toffee bars (chopped)

Method

  1. Make the brownies first by following the instructions written on the box. After they’ve cooled down, cut them into 1-inch cubes.
  2. Mix together the pudding mix and milk.
  3. Once it thickens, then add the instant coffee.
  4. Fold in the whipped topping.
  5. Get out your serving glasses. Put a layer of brownie on the bottom, then pudding mixture, and lastly, the chopped toffee bar pieces. Repeat as many times as you want for multiple layers.
  6. Chill the glasses for at least 30 minutes before eating.

Anti-Inflammatory Mango Smoothie and CBD Oil

After reading some interesting articles and searching for how to get rid of pain, either through physical therapy or using OTC meds or even prescriptions I stumbled on a smoothie made using Mangos, Bananas, Turmeric powder, almond milk. I was all for trying the recipe as I can’t take ibuprofen as it started hurting my stomach, a good sign it’s a bad thing. I will do anything to alleviate the pain I am experiencing without the use of drugs. The natural way is the best way.

Turmeric comes from the root of the plant and is considered an antioxidant and anti-inflammatory. In an article in 2018 (1) “Science has started to back up what Indians have known for a long time–it really does contain compounds with medicinal properties.” These compounds are called curcuminoids, the most important of which is curcumin.

Curcumin is the main active ingredient in turmeric and has powerful anti-inflammatory effects and a very strong antioxidant. However, the curcumin is best eaten with a fatty meal like my recipe has coconut oil for the body to absorb into the bloodstream, and I have read that adding “black pepper” helps the absorption of curcumin. (So to be clear, and not confusing, curcumin is the active ingredient in turmeric.)

I’ve been looking for more alternative ways to help my pain, recently I had a flair up of Bursitis in my left leg while dealing with lower back pain from accidents years ago. So this recipe is just one that I have made exclusive for inflammation and just one way I am getting relief.  I found the original recipe on Pots and Plants after she shared her recipe on one of my Wordless Wednesday Linky Party 

After attending a class at Oasis To Zen Wellness Center in Las Vegas, and to learn more about CBD oils and tinctures, since then I have been using CBD oils creams, lotions and tinctures and I am liking how it is working. You see you can add CBD oils and tinctures to any smoothie you make for its benefits, just follow the directions. And you can use creams, lotions, and ointments topically in relief of pain, which I am finding useful for arthritis in my hands and neck and the Bursitis I mentioned.

Did you know that the word pasta translates to “paste” in Italian? It’s a reference to the dough, which is made using flour, water, and sometimes eggs. A simple recipe that’s been around for centuries, pasta continues to be a food staple all over the world and considered comfort food.

But pasta is rarely if ever, eaten by itself. Its accompaniments are what add to its deliciousness. And nothing is more satisfying than homemade pasta with a healthy but yummy pasta sauce.

When you buy sauce from the grocery store, chances are there are many additives, including sugar. If you opt to make your own, you have the power to make sure it’s both delicious AND healthy.

Read on to discover three healthy pasta sauce recipes.

1. Linguine with Spinach Sauce

Popeye was right. What’s healthier than spinach? It’s packed with folic acid, vitamin A, vitamin C, fiber, calcium, magnesium, and lots of other nutrients. It’s been known to help protect against heart disease and high blood pressure.

For this sauce, all you’ll need is garlic, spinach, and parmesan cheese!

Start by sautéing 3 to 4 garlic cloves (sliced) in a couple of tablespoons of olive oil. Once they begin to brown slightly, add 2 cups of fresh spinach leaves. Sauté just enough that it begins to wilt.

Add salt, pepper, and then put it aside.

While it cools a bit, cook your pasta. And remember that you don’t have to use linguini. In fact, this sauce is delicious with almost any pasta!

Make sure you reserve a cup of the boiled pasta water before you drain it.

Set your drained pasta aside and go back to your spinach. Take your spinach and garlic mixture and put it all into a food processor. Add a half cup of the reserved water and a half cup of grated parmesan cheese.

Puree it until it forms a sauce, and then add it back into the pan with about a quarter cup of the remaining pasta water. Once it’s heated through, give it a taste and add more salt and pepper if necessary.

Serve it over linguine or your favorite pasta and sprinkle with some parmesan cheese!

2. Angel Hair Avocado Pasta

Avocados are amazing. Whether you eat them as is, blended in a smoothie, or in guacamole, avocados are absolutely delicious. Plus, they are jam-packed with nutrients like riboflavin, niacin, folate, pantothenic acid, magnesium, and vitamins C, K, E, and B-6.

And even though most of the calories come from fat, they are GOOD fats, so don’t shy away!

Cook your angel hair pasta or a pasta of your choice and set it aside, drained.

To make your sauce, combine the following ingredients into a food processor:

  • 2 cloves garlic
  • 1/2 cup fresh basil leaves
  • 2 tablespoons fresh lemon juice
  • 2 ripe avocados (without the skins and pit)

Once it’s blended, add salt and pepper to taste and 1/3 cup olive oil and blend again.

Get a large mixing bowl and put your pasta in it. Add your sauce and mix it up. Then add 1/2 cup cherry tomatoes, halved, and 1/2 cup of corn, drained.

Mix it all together, season with additional salt and pepper if needed, and serve immediately!

This dish can be completely vegan, or you can top it with some shaved cheese for an added bite. Add grilled chicken or salmon for protein!

3. Healthy Cauliflower Fettuccini Alfredo

What’s better than Fettuccini Alfredo? Almost nothing… It’s one of the richest, savory, comforting pasta sauce recipes out there. That being said, it’s not necessarily the healthiest dish.

But using cauliflower for the sauce, it can make for a nutritional dinner. Cauliflower is high in vitamin B and fiber. It also provides antioxidants that help protect against cancer.

For this dish you’ll need the following ingredients:

  • 1 pound fettuccini noodles
  • 3 small heads cauliflower
  • 1 tablespoon butter
  • 6 cups vegetable broth
  • 5-6 cloves garlic, minced
  • 1 teaspoon salt
  • pinch of nutmeg and black pepper
  • 1 tablespoon olive oil
  • 1/4 cup heavy cream
  • 1 cup pasta water (the boiled water after cooking your pasta)

Bring the vegetable broth to a boil. Chop your cauliflower and add it to the boiling broth. Cook it until it’s soft (after about 15 minutes).

In another pan, melt your butter and sauté your garlic until it’s soft and fragrant (about 5 minutes).

Cook your pasta set it aside, and save some of that pasta water.

Take your cooked cauliflower and add it to a blender with about 2 cups of the broth that it cooked in. Add the sautéed garlic and your salt, pepper, and nutmeg. Blend it until it’s sauce consistency. Add you olive oil and blend again. If your sauce is too thick, you may add some pasta water or some more vegetable broth and blend until you reach the consistency of your preference.

Once your mixture is smooth, transfer it back to the pan where you cooked your butter and garlic. Add the cream and cook it over low heat. Keep it warm until you’re ready to eat it! And once you are, add it to the pasta and serve immediately.

You can sprinkle it with cheese if you like and ground black pepper.

If you want to go ALL OUT with this meal, use homemade pasta instead of store-bought.
